For the Chicken:
4 boneless, skinless chicken breasts
Salt and pepper, to taste
2 tablespoons olive oil

For the Balsamic Sauce:
1/4 cup balsamic vinegar
1 tablespoon honey or maple syrup
1 teaspoon dried basil
1 teaspoon dried oregano
2 cloves garlic, minced

For Toppings and Garnish:
1 cup cherry tomatoes, halved
1 cup shredded mozzarella cheese
Fresh basil or parsley, optional

Instructions

  • Season both sides of the chicken breasts with salt and pepper.
  • Heat olive oil in a large oven-safe skillet over medium heat. Add chicken and sear 4–5 minutes per side until golden. Remove briefly to a plate.
  • In the same skillet, add balsamic vinegar, honey (or maple syrup), basil, oregano, and garlic. Simmer for 1–2 minutes, scraping up browned bits.
  • Return chicken to the skillet and spoon sauce over the top. Simmer 3–5 minutes until chicken is nearly cooked through.
  • Sprinkle mozzarella evenly over the chicken and scatter tomatoes around the pan.
  • Transfer skillet to a preheated 400°F (200°C) oven and bake 5–8 minutes, until cheese is melted and chicken is cooked through.
  • Garnish with fresh herbs if desired and serve warm.
