- 1/2 cup butter
- ¾ cup sugar
- ½ cup sour cream
- 1 egg
- 1 cup very ripe bananas (about 2)
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- ½ tsp baking soda
- ½ tsp salt
- ¼ cup butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 1½ tbsp milk
Instructions
- Preheat the oven to 375°F (190°C) and line an 8×8 baking dish with parchment paper.
- In a mixing bowl, blend together butter, sugar, sour cream, and egg until creamy. Stir in mashed bananas and vanilla.
- Add flour, baking soda, and salt; mix until just combined.
- Spread the batter evenly in the prepared pan and bake for 20-25 minutes until golden brown.
- Allow to cool slightly before removing from the pan.
- For icing: Melt additional butter in a saucepan until browned, then whisk in powdered sugar, vanilla, and milk until smooth.
- Frost the bars once cooled.
