  • 1/2 cup natural creamy peanut butter
  • 1/2 cup pure maple syrup
  • 3 Tbsp melted coconut oil (or avocado oil)
  • 2 cups old-fashioned rolled oats
  • 2 scoops plant-based protein powder
  • Optional: chocolate chips (or cacao nibs), chopped walnuts

Instructions

  1. Preheat your oven to 350ºF (175ºC) and line an 8×8 inch baking dish with parchment paper.
  2. Mash the ripe bananas in a mixing bowl using a fork until smooth.
  3. Stir in the peanut butter, maple syrup, melted coconut oil, and vanilla extract until well combined.
  4. Add in the rolled oats, protein powder, chocolate chips (or alternatives), walnuts (if using), and salt. Mix until just combined.
  5. Pour the mixture into the prepared baking dish and smooth it out evenly. Bake for 28 to 32 minutes until set.
  6. Allow cooling in the pan for about 30 minutes before lifting out with parchment paper and slicing into bars.
