  • 2 large eggs
  • 1 ½ cups all-purpose flour
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • For the glaze: 1 tsp. vanilla bean paste (or extract), 3 TBSP instant banana pudding mix, ¼ cup milk, 1 cup powdered sugar, 3 vanilla wafers, finely crushed like a powder

Instructions

  1. Preheat your oven to 350°F.
  2. For the filling, beat cream cheese and pudding mix until smooth. Add egg and vanilla; fold in chopped vanilla wafers.
  3. For the batter, combine mashed bananas and sugar using a stand mixer; add oil and eggs one at a time. Gradually mix in flour, baking soda, and salt.
  4. In a prepared loaf pan, layer half of the batter, then add the pudding filling, followed by the remaining batter.
  5. Bake for 45-55 minutes or until golden brown; check doneness with a toothpick.
  6. Cool and prepare the glaze by whisking pudding mix with milk and powdered sugar.
