- 8 oz. cream cheese
- 2 ½ oz. instant banana pudding mix
- 1 egg
- 10 vanilla wafers
- 1 ½ cups mashed bananas (about 4 medium)
- 1 cup granulated sugar
- ¼ cup vegetable oil
- 2 large eggs
- 1 ½ cups all-purpose flour
- 1 tsp. baking soda
- ¼ tsp. salt
- For the glaze: 1 tsp. vanilla bean paste (or extract), 3 TBSP instant banana pudding mix, ¼ cup milk, 1 cup powdered sugar, 3 vanilla wafers, finely crushed like a powder
Instructions
- Preheat your oven to 350°F.
- For the filling, beat cream cheese and pudding mix until smooth. Add egg and vanilla; fold in chopped vanilla wafers.
- For the batter, combine mashed bananas and sugar using a stand mixer; add oil and eggs one at a time. Gradually mix in flour, baking soda, and salt.
- In a prepared loaf pan, layer half of the batter, then add the pudding filling, followed by the remaining batter.
- Bake for 45-55 minutes or until golden brown; check doneness with a toothpick.
- Cool and prepare the glaze by whisking pudding mix with milk and powdered sugar.
