- 3 Tablespoons granulated sugar
- 1 teaspoon vanilla
- 1 teaspoon corn starch
- 1 cup all-purpose flour

- 1/4 cup vegetable oil
- 1/2 cup granulated sugar

- 1/2 cup Greek yogurt
- 1 1/2 cup fresh berries (about 1 cup blueberries and 1/2 cup raspberries)
- 3/4 cup powdered sugar
- 1 1/2 – 2 1/2 teaspoons milk or cream
Instructions
- Preheat the oven to 425°F (220°C) and prepare your muffin pan with liners.
- For the streusel topping, combine flour, sugar, and salt in a bowl, then mix in melted butter until crumbly.
- In another bowl, blend softened cream cheese with granulated sugar, corn starch, and vanilla until smooth.
- Whisk together flour, baking powder, and salt in a large bowl.
- In a separate bowl, whisk egg with granulated sugar before adding yogurt, vegetable oil, and vanilla; mix until pale yellow.
- Fold wet ingredients into dry ingredients gently until just combined.
- Carefully incorporate blueberries and half of the raspberries into the batter.
- Fill muffin cups with batter, adding cream cheese mixture in the center and topping with remaining berries.
- Sprinkle streusel on top before baking at 350°F (175°C) for 30–35 minutes until golden.
