  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla
  • 1/2 cup Greek yogurt
  • 1 1/2 cup fresh berries (about 1 cup blueberries and 1/2 cup raspberries)
  • 3/4 cup powdered sugar
  • 1 1/22 1/2 teaspoons milk or cream

Instructions

  1. Preheat the oven to 425°F (220°C) and prepare your muffin pan with liners.
  2. For the streusel topping, combine flour, sugar, and salt in a bowl, then mix in melted butter until crumbly.
  3. In another bowl, blend softened cream cheese with granulated sugar, corn starch, and vanilla until smooth.
  4. Whisk together flour, baking powder, and salt in a large bowl.
  5. In a separate bowl, whisk egg with granulated sugar before adding yogurt, vegetable oil, and vanilla; mix until pale yellow.
  6. Fold wet ingredients into dry ingredients gently until just combined.
  7. Carefully incorporate blueberries and half of the raspberries into the batter.
