Ingredients
- 1/2 cup softened butter
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup mashed ripe bananas (about 2.5 medium)
- 1 cup all-purpose flour
- 1/2 cup old-fashioned oats (blended into powder)
- 1 teaspoon baking soda
- 1.5 teaspoons baking powder
- 3/4 teaspoon salt
- 1/2 cup sour cream
- Optional: spices (cinnamon, nutmeg, cloves) and nuts
Instructions
- Preheat the oven to 350°F (175°C). Prepare a 9×5 inch loaf pan with nonstick spray or parchment paper.
- If using nuts, toast them on a dry baking sheet for 5–7 minutes until fragrant; set aside to cool.
- In a large bowl or stand mixer, cream together softened butter, brown sugar, and granulated sugar until fluffy.
- Add eggs and vanilla extract; mix until well combined.
- Mash the ripe bananas and fold them into the butter mixture.
- In another bowl, combine all-purpose flour, oat flour, baking soda, baking powder, salt, and optional spices.
- Gently mix dry ingredients into the wet ingredients until just combined; then fold in sour cream and toasted nuts if desired.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for about 55–65 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool on a wire rack for at least 20 minutes before slicing.
