  • 1/2 cup canola oil
  • 1 large egg

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder

  • 2 cups fresh blueberries
  • 1/3 cup granulated sugar (for streusel topping)
  • 1/3 cup all-purpose flour (for streusel topping)
  • 3 tablespoons salted butter (softened but not melted)

Instructions

  1. Preheat your oven to 350ºF. Grease and flour a 9"x5" loaf pan.
  2. In a bowl, whisk together sugar, milk, oil, egg, and vanilla.
  3. In another bowl, combine flour, baking powder, and salt. Add to wet mixture and stir until just combined.
  4. Gently fold in blueberries and pour batter into the prepared loaf pan.
  5. For the streusel topping, mix sugar, flour, and softened butter until crumbly; sprinkle on top of the batter.
  6. Bake for 55-60 minutes or until a toothpick comes out clean. Cool before slicing.
