- 3/4 cup granulated sugar
- 1/2 cup 2% milk
- 1/2 cup canola oil
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 cups fresh blueberries
- 1/3 cup granulated sugar (for streusel topping)
- 1/3 cup all-purpose flour (for streusel topping)
- 3 tablespoons salted butter (softened but not melted)
Instructions
- Preheat your oven to 350ºF. Grease and flour a 9"x5" loaf pan.
- In a bowl, whisk together sugar, milk, oil, egg, and vanilla.
- In another bowl, combine flour, baking powder, and salt. Add to wet mixture and stir until just combined.
- Gently fold in blueberries and pour batter into the prepared loaf pan.
- For the streusel topping, mix sugar, flour, and softened butter until crumbly; sprinkle on top of the batter.
- Bake for 55-60 minutes or until a toothpick comes out clean. Cool before slicing.
