Ingredients
- 1 can lite coconut milk (13.5 oz)
- 1/4 cup water
- 1 tsp vanilla extract
- 6 tbsp chia seeds
- 1 1/2 cup frozen blueberries
- 2 tbsp water
Instructions
- In a large mixing bowl, whisk together coconut milk, water, vanilla extract, and chia seeds until well combined. Refrigerate for at least 6 hours or overnight to thicken.
- In a saucepan over medium heat, combine frozen blueberries and water. Cook until blueberries burst, then mash them down. Simmer on low heat for about 10 minutes before letting cool completely.
- Once the chia pudding has set, give it a stir and layer it with the cooled blueberry sauce in storage jars.
