Ingredients
- 2 large chicken breasts
- 3/4 cup chicken broth (low sodium)
- 1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese
- 1/2 medium onion, chopped
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 teaspoon garlic powder
- Salt & pepper (to taste)
- 1-2 tablespoons chopped parsley (optional)
Instructions
- Cut chicken breasts in half lengthwise and season with garlic powder, salt, and pepper.
- Heat olive oil and butter in a skillet over medium-high heat. Cook chicken for 5-6 minutes per side until cooked through; transfer to a plate.
- Sauté onions in the same skillet until softened, about 5 minutes.
- Add chicken broth and Boursin cheese; stir until smooth and bubbly for about 5 minutes.
- Return chicken to the skillet; warm through for a couple of minutes, adding more broth if needed for sauce consistency.
- Serve hot, optionally garnished with chopped parsley.
