  • 4 cups low-sodium beef broth
  • 3 cans (8 oz each) tomato sauce

  • 1 bay leaf
  • 3 tbsp light brown sugar
  • 2 tbsp fresh parsley (chopped)

Instructions

  1. In a large soup pot, heat the vegetable oil over medium-high heat. Add ground beef, seasoning with salt and pepper. Cook until browned.
  2. Stir in diced onions and minced garlic, cooking for an additional 2-3 minutes until onions are tender.
  3. Mix in chopped cabbage, sliced carrots, tomato sauce, beef broth, uncooked rice, bay leaf, and brown sugar until evenly combined.
  4. Bring the mixture to a simmer and cook for about 25 minutes or until the rice is tender.
  5. Remove the bay leaf and sprinkle with fresh parsley before serving hot.
