- 1 cup powdered sugar
- 1 tsp vanilla extract
- 3/4 tsp ground cinnamon
- 1/2 cup crushed pecans (optional)
- 1/4 cup shredded carrots (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and prepare two greased loaf pans.
- In one bowl, mix flour, baking soda, salt, and spices.
- In another bowl, beat together softened butter and sugars until creamy; add eggs one at a time followed by mashed bananas.
- Gradually combine wet ingredients with dry ingredients until just mixed; gently fold in shredded carrots.
- Pour batter into prepared pans and bake for about 35 minutes or until a toothpick comes out clean.
- Cool in pans for ten minutes before transferring to wire racks.
- For frosting: Beat cream cheese, butter, powdered sugar, and spices until smooth; frost cooled loaves.
