Ingredients
- 1 cup medjool dates (pits removed)
- 1/3 cup shredded carrots
- 1 cup walnuts
- 1 tbsp chia seeds
- 1/3 cup shredded unsweetened coconut
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- pinch of salt
- 1 tsp vanilla extract
- extra 1/2 cup shredded coconut for rolling
Instructions
- Combine all ingredients in a food processor and pulse until a sticky dough forms.
- Scoop out portions with a spoon and roll between palms to form small balls.
- Roll each ball in shredded coconut to coat evenly.
- Place on a parchment-lined baking tray and refrigerate for at least one hour until firm.
