Ingredients
- 12 oz pasta (penne or rotini)
- 1 tbsp olive oil
- 1 lb chicken sausage, sliced
- 2 zucchinis, sliced
- 1 pint cherry tomatoes, halved
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- 1/4 cup fresh basil, chopped
Instructions
- Cook the pasta in salted boiling water according to package instructions. Drain and reserve 1/2 cup of pasta water.
- In a large skillet over medium heat, add olive oil and sliced chicken sausage. Cook until browned (5–7 minutes).
- Add zucchini slices to the skillet and sauté until tender (4–5 minutes).
- Stir in minced garlic and halved tomatoes; cook until tomatoes burst and garlic is fragrant (3–4 minutes).
- Combine cooked pasta with the sausage mixture in the skillet. Toss gently, adding reserved pasta water as needed.
- Season with salt, black pepper, and optional red pepper flakes. Stir in grated Parmesan cheese and top with fresh basil before serving.
