Instructions
- Prepare the cheesecake filling: Beat softened cream cheese with granulated sugar and vanilla extract until smooth; freeze for 30 minutes.
- For the cookie dough, cream together softened butter, granulated sugar, and brown sugar until fluffy. Mix in eggs and vanilla extract.
- Combine all-purpose flour, baking soda, baking powder, and salt in a separate bowl; gradually add to the wet ingredients until a dough forms.
- Assemble cookies by scooping dough, flattening it, adding cheesecake filling in the center, sealing it up, and rolling into balls.
- Roll each ball in a cinnamon-sugar mixture before placing on lined baking sheets; bake at 350°F for 11–13 minutes.
- Drizzle cooled cookies with icing made from powdered sugar, milk or cream, and vanilla extract.
