Ingredients
- 1 cup full-fat cottage cheese
- ¼ cup natural peanut butter
- 2 tbsp maple syrup (or sugar-free alternative)
- 1 tsp vanilla extract
- ¼ tsp salt (optional)
- 2 oz dark chocolate chips (for topping)
- 1 tsp coconut oil (for topping)
Instructions
- In a high-speed blender or food processor, combine cottage cheese, peanut butter, maple syrup, vanilla extract, and optional salt. Blend until smooth and creamy.
- If needed, adjust the consistency by adding 1–2 tablespoons of milk or cream and blend again.
- Transfer the mousse to a mixing bowl and refrigerate for 15–20 minutes to thicken.
- For the topping, melt dark chocolate chips with coconut oil in a microwave-safe bowl in short bursts until smooth.
- Serve the chilled mousse in bowls, drizzled with melted chocolate and topped with chopped peanuts.
