  • 2 pounds ground beef
  • 1 cup canned pinto beans (drained and rinsed)
  • 1 cup BBQ sauce (divided)
  • 1 cup sharp cheddar cheese (shredded)
  • ½ cup plain breadcrumbs
  • 2 large eggs (beaten)
  • 1 small yellow onion (finely diced)
  • 1 green bell pepper (finely diced)
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic (minced)
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons chili powder
  • 2 teaspoons kosher salt
  • ½ teaspoon cayenne pepper
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F. Lightly spray a large loaf pan with nonstick cooking spray.
  2. In a skillet over medium heat, sauté the diced onion and bell pepper in vegetable oil until softened. Add minced garlic and cook for an additional minute.
  3. In a mixing bowl, combine cooled vegetables with ground beef, eggs, pinto beans, breadcrumbs, ½ cup BBQ sauce, Worcestershire sauce, chili powder, salt, cayenne pepper, and black pepper. Mix gently until just combined.
  4. Shape half of the mixture into a flat loaf in the center of the loaf pan; create a trench down the middle and fill it with shredded cheese. Top with remaining meat mixture and press gently to seal.
  5. Brush ¼ cup BBQ sauce over the top and bake for 40 minutes. Remove from oven; brush with remaining BBQ sauce and bake for another 25-30 minutes or until internal temperature reaches 160°F. Let rest before slicing.
