  • 2 cloves garlic (minced)
  • 1/4 cup all-purpose flour
  • 2 tbsp tomato paste
  • Salt and black pepper to taste
  • 2 tbsp apple juice (for extra flavor)
  • Fresh herbs (parsley, chives, or dill) for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté celery, carrot, and onion for about 5 minutes until softened. Add minced garlic and cook for another minute.
  2. Stir in tomato paste, paprika, and cayenne pepper; cook for 1-2 minutes.
  3. Sprinkle flour over the vegetables, stirring for 2 minutes to create a roux. Gradually pour in broth while whisking to avoid lumps; bring to a simmer.
  4. Simmer the bisque for 10-12 minutes until thickened; stir in apple juice if desired.
  5. Lower heat and add heavy cream along with shrimp and crab meat; cook for an additional 5 minutes until heated through.
