- 1/2 pound cooked shrimp (peeled, deveined, and chopped)
- 1/2 pound cooked crab meat (shells removed)
- 1 tbsp olive oil
- 4 cups seafood or chicken broth
- 1 cup heavy cream
- 1/4 cup celery (finely chopped)
- 1/4 cup carrot (finely chopped)
- 1/2 cup onion (finely chopped)
- 2 cloves garlic (minced)
- 1/4 cup all-purpose flour
- 2 tbsp tomato paste
- Salt and black pepper to taste
- 2 tbsp apple juice (for extra flavor)
- Fresh herbs (parsley, chives, or dill) for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté celery, carrot, and onion for about 5 minutes until softened. Add minced garlic and cook for another minute.
- Stir in tomato paste, paprika, and cayenne pepper; cook for 1-2 minutes.
- Sprinkle flour over the vegetables, stirring for 2 minutes to create a roux. Gradually pour in broth while whisking to avoid lumps; bring to a simmer.
- Simmer the bisque for 10-12 minutes until thickened; stir in apple juice if desired.
- Lower heat and add heavy cream along with shrimp and crab meat; cook for an additional 5 minutes until heated through.
- Season with salt and black pepper; ladle into bowls and garnish with fresh herbs.
