Ingredients
- 2 chicken breasts, cut into 1” pieces
- 3 tbsp olive oil
- 8 oz cremini mushrooms, sliced
- ½ medium onion, chopped
- 3 cloves garlic, minced
- ⅔ cup chicken broth
- ½ cup full-fat sour cream
- Salt and pepper, to taste
- Flour, for dredging
Instructions
- Season the chicken with garlic powder, salt, pepper, and flour.
- In a skillet, heat 2 tbsp olive oil over medium-high heat. Sear the chicken until browned on all sides, then set aside.
- In the same skillet, add butter and sauté mushrooms and onions until golden.
- Stir in Dijon mustard and minced garlic; cook for an additional minute.
- Add chicken broth and scrape up any bits from the pan. Return the chicken to the skillet and simmer for 2 minutes.
- Gently mix in sour cream without boiling. Adjust seasoning as needed before serving.
