  • 3 tbsp olive oil
  • 8 oz cremini mushrooms, sliced
  • ½ medium onion, chopped
  • 3 cloves garlic, minced
  • ⅔ cup chicken broth
  • ½ cup full-fat sour cream
  • Salt and pepper, to taste
  • Flour, for dredging

Instructions

  1. Season the chicken with garlic powder, salt, pepper, and flour.
  2. In a skillet, heat 2 tbsp olive oil over medium-high heat. Sear the chicken until browned on all sides, then set aside.
  3. In the same skillet, add butter and sauté mushrooms and onions until golden.
  4. Stir in Dijon mustard and minced garlic; cook for an additional minute.
  5. Add chicken broth and scrape up any bits from the pan. Return the chicken to the skillet and simmer for 2 minutes.
  6. Gently mix in sour cream without boiling. Adjust seasoning as needed before serving.
