  • 2 lbs chicken, cut into thin strips

  • 1 tsp ground pepper
  • 1 white onion, diced
  • 2 tbsp garlic, diced
  • ½ cup chicken stock
  • ½ cup roasted red pepper, drained and sliced
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, shredded
  • 1 tbsp Italian seasoning
  • ½ cup pepperoncini peppers, drained

Instructions

  1. Season the chicken strips with salt and pepper.
  2. Melt butter in a large skillet over medium-high heat. Cook the chicken until browned on all sides; then remove from the skillet.
  3. Sauté onions and garlic in the same skillet until fragrant.
  4. Add chicken stock and roasted red peppers; reduce by half.
  5. Stir in heavy cream and Parmesan cheese until smooth.
  6. Return heat to medium; add Italian seasoning and pepperoncini peppers.
  7. Combine the browned chicken back into the pan; simmer until cooked through.
