Ingredients
- 1 pound chicken breast, cubed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 tablespoon soy sauce
- 1 teaspoon grated ginger
- Salt and pepper to taste
- 1 cup jasmine rice
- 2 cups chicken broth
- 1 cup pineapple, cubed
- 1/4 cup sliced green onions
- 1 tablespoon sesame seeds
Instructions
- Heat olive oil in a large skillet over medium heat. Add the cubed chicken and cook until golden brown and fully cooked through (about 6-8 minutes). Remove from the pan.
- In the same skillet, sauté onion, garlic, and red bell pepper until softened (about 5 minutes). Stir in cubed pineapple and cook for another 2 minutes.
- Add jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper to the skillet. Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes or until rice is tender.
- Return the cooked chicken to the skillet and stir to combine flavors. Garnish with sliced green onions and sesame seeds before serving.
