  • 2 cloves garlic, minced
  • 4 cups potatoes, peeled and diced (russet or Yukon gold)
  • 4 cups chicken broth
  • 1 cup heavy cream or plant-based alternative
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme

Instructions

  1. In a skillet, heat olive oil over medium heat. Brown the ground turkey or chicken sausage until fully cooked, breaking it into crumbles. Drain excess grease.
  2. In the same skillet, sauté diced onion for 3-4 minutes until softened, then add minced garlic and cook for an additional 30 seconds.
  3. In the crockpot, combine browned meat, sautéed onions and garlic, diced potatoes, chicken broth, salt, pepper, and thyme.
  4. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until potatoes are tender.
  5. Stir in heavy cream (or plant-based alternative) at the end and allow to warm for an additional 15-20 minutes before serving.
