Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan and line it with parchment paper.
- In a bowl, combine chopped dates with boiling water and baking soda; let sit for 10 minutes.
- Cream butter and brown sugar until fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla extract and orange zest.
- In another bowl, whisk together flour, baking powder, cinnamon, and salt.
- Gradually add dry ingredients to wet mixture while alternating with fresh orange juice until just combined.
- Fold in softened dates along with any soaking liquid.
- Pour batter into prepared pan and smooth the top. Bake for 50–55 minutes or until a toothpick comes out clean.
- Let cool before glazing: Mix powdered sugar with orange juice and zest until smooth; drizzle over cooled cake.
