- 100 g Unsalted Butter (or vegan butter)
- 500 ml Whole Milk (or almond/soy milk)
- 1 whole Vanilla Pod (or 1 tsp extract)
- 4 Egg Yolks (or cornstarch for egg-free custard)
- 30 g Cornstarch (optional)
- 100 g Mini Chocolate Chips
Instructions
- In a mixing bowl, combine flour, sugar, salt, and fresh yeast.
- In another bowl, whisk together eggs and melted butter until smooth. Gradually add this mixture to the dry ingredients at low speed until combined.
- Increase mixer speed to medium and knead dough until elastic and smooth. Let rise covered in a warm place for about an hour.
- For the custard filling, heat milk until simmering. In another bowl, whisk egg yolks, sugar, and cornstarch. Temper with hot milk before returning to the saucepan to thicken.
- After rising, punch down dough on a floured surface and divide into pieces. Fill each piece with custard filling and fold to seal.
- Preheat oven to 180°C (350°F), bake brioches on parchment-lined sheets for about 12 minutes or until golden brown.
