  • 4 Egg Yolks (or cornstarch for egg-free custard)
  • 30 g Cornstarch (optional)
  • 100 g Mini Chocolate Chips

Instructions

  1. In a mixing bowl, combine flour, sugar, salt, and fresh yeast.
  2. In another bowl, whisk together eggs and melted butter until smooth. Gradually add this mixture to the dry ingredients at low speed until combined.
  3. Increase mixer speed to medium and knead dough until elastic and smooth. Let rise covered in a warm place for about an hour.
  4. For the custard filling, heat milk until simmering. In another bowl, whisk egg yolks, sugar, and cornstarch. Temper with hot milk before returning to the saucepan to thicken.
  5. After rising, punch down dough on a floured surface and divide into pieces. Fill each piece with custard filling and fold to seal.
  6. Preheat oven to 180°C (350°F), bake brioches on parchment-lined sheets for about 12 minutes or until golden brown.
