- 1 pound mild Italian chicken sausage
- 1 small head kale (chopped)
- 1 cup cherry tomatoes
- 1/2 cup feta cheese crumbles
- 12 large eggs (beaten)
- 3/4 tsp sea salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet over medium heat, cook the chicken sausage until browned and fully cooked. Set aside.
- In a large mixing bowl, combine chopped kale, cherry tomatoes, cooked chicken sausage, feta cheese, beaten eggs, and sea salt. Mix until well combined.
- Lightly grease a baking dish and pour the mixture evenly into it.
- Bake for about 50 minutes until the eggs are set and the top is golden brown.
- Allow to cool for a few minutes before slicing into portions and serve warm.
