  • Total Time: 1 hour 10 minutes
  • Yield: Approximately 10 servings 1x

Ingredients

Scale
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (room temperature)
  • 4 oz cream cheese (room temperature)
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 teaspoons coconut extract
  • 1 (8 oz) can crushed pineapple (do not drain)
  • 1 1/2 cups sweetened shredded coconut (divided)

Instructions

  1. Preheat your oven to 350°F. Grease and flour a 9-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the unsalted butter, cream cheese, and granulated sugar until light and fluffy. Add the eggs, vanilla extract, and coconut extract; mix until smooth.
  4. Gradually add the dry ingredients to the wet mixture until well combined. Fold in the crushed pineapple and 1 cup of shredded coconut.
  5. Pour the batter into the prepared loaf pan and sprinkle the top with the remaining shredded coconut. Tent with foil to prevent over-browning.
  6. Bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool before slicing. Serve warm or at room temperature.
