- 500g (1.1lb) fresh or frozen strawberries
- 100g (1/2 cup) granulated sugar
- 1 tablespoon lemon or lime juice
- Pinch of salt
Instructions
- Prepare the strawberries by removing the green tops and chopping them into pieces.
- In a medium saucepan over low heat, combine strawberries, sugar, lemon juice, and salt.
- Cook gently until the strawberries begin to release their juices.
- Once simmering, increase to low-medium heat and cook for about 15 minutes while stirring regularly.
- Use a potato masher to break down the berries to your desired consistency.
- Remove from heat when thickened; it will continue to thicken as it cools.
- Allow cooling to room temperature before transferring to a clean glass jar for storage in the refrigerator.
