- 2.2 pounds fresh strawberries
- 3 1/2 cups sugar
- 1 large lemon
Instructions
- Thoroughly wash the strawberries, discarding any spoiled ones, then chop them into smaller pieces.
- In a heavy-bottomed pot, combine chopped strawberries, sugar, and juice from half of the lemon along with the remaining lemon halves.
- Heat the mixture over medium heat, stirring until combined, then bring it to a rolling boil.
- Reduce heat to low and let it simmer for about 30 minutes until thickened, stirring occasionally.
- Blend the mixture with a hand blender for a smooth texture.
- Test for setting by using a candy thermometer (220°F) or the frozen plate method.
- Fill sterilized jars with hot jam up to the rim and seal tightly.
- Store in a cool place; refrigerate after opening.
