Ingredients
- 2 cups fresh ripe strawberries
- 8 cups mixed salad greens (a blend of spinach and lettuce)
- 1/2 red onion, sliced
- 1/3 cup pecan pieces or chopped walnuts or sliced almonds
- 1/3 cup crumbled feta cheese
- 2 tablespoons aged balsamic vinegar
- 2 tablespoons dijon mustard
- 2 tablespoons maple syrup or honey
- 1/4 teaspoon kosher salt
- 6 tablespoons olive oil
Instructions
- Wash the strawberries under cold water, remove stems, and slice into quarters.
- In a large mixing bowl, combine the mixed greens and sliced red onion.
- Add your choice of nuts for crunch and fold in crumbled feta cheese.
- In a separate bowl, whisk together aged balsamic vinegar, dijon mustard, maple syrup (or honey), kosher salt, and olive oil until smooth.
- Drizzle the vinaigrette over the salad mixture and toss gently until evenly coated. Season with freshly ground black pepper to taste.
- Serve immediately as an appetizer or side dish.
