Ingredients
- 1 cup all-purpose flour
- 1 1/2 TBSP cornstarch
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 6 TBSP unsalted butter (room temperature)
- 1/2 cup white granulated sugar
- Zest of a small lemon
- 3/4 tsp pure vanilla extract
- 2 large eggs (room temperature)
- 1/2 cup sour cream (room temperature)
- 1 lb strawberries (rinsed, dried, and cut into small cubes)
- 2 TBSP white granulated sugar
- 4 oz cream cheese (room temperature)
- 1/2 tsp pure vanilla extract
- 3/4 cup powdered sugar (sifted)
- 1 cup heavy cream (cold)
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, whisk together all-purpose flour, cornstarch, salt, baking soda, and baking powder.
- In another bowl, beat unsalted butter with white granulated sugar until light and fluffy. Add lemon zest and vanilla extract; mix well. Incorporate eggs one at a time followed by sour cream until fully combined. Gradually add dry mixture into wet mixture until just combined.
- Pour the batter into a greased baking pan. Bake for about 15 minutes or until golden brown. Let cool completely.
- In a separate bowl, toss cubed strawberries with white granulated sugar. This will enhance their sweetness while releasing some juice.
- Using an electric mixer, beat cream cheese until smooth. Add vanilla extract and sifted powdered sugar; mix until well blended. In another bowl, whip heavy cream until soft peaks form. Fold whipped cream into cream cheese mixture gently.
- Cut cooled lemon cake into cubes. In your trifle dish or glass serving bowl, layer cake cubes at the bottom followed by strawberries and then cream cheese mixture. Repeat layers as desired.
