  • 2 medium oranges (about 400 g), boiled and pureed
  • 150 g almond meal
  • 100 g shelled pistachios, finely ground
  • 6 large eggs
  • 200 g granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat your oven to 170°C (340°F) and line a 23 cm (9 inch) springform pan with parchment paper.
  2. Simmer the whole oranges in water for about 60 minutes until soft. Drain, cool slightly, remove seeds, and puree until smooth.
  3. In a large bowl, whisk together the eggs and granulated sugar until thickened. Stir in the orange puree.
  4. In another bowl, combine almond meal, ground pistachios, baking powder, and salt. Gently fold into the wet mixture until just combined.
  5. Pour the batter into the prepared pan and bake for 50 to 60 minutes until set; check doneness with a skewer.
  6. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
