Ingredients
- 2 medium oranges (about 400 g), boiled and pureed
- 150 g almond meal
- 100 g shelled pistachios, finely ground
- 6 large eggs
- 200 g granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon fine sea salt
Instructions
- Preheat your oven to 170°C (340°F) and line a 23 cm (9 inch) springform pan with parchment paper.
- Simmer the whole oranges in water for about 60 minutes until soft. Drain, cool slightly, remove seeds, and puree until smooth.
- In a large bowl, whisk together the eggs and granulated sugar until thickened. Stir in the orange puree.
- In another bowl, combine almond meal, ground pistachios, baking powder, and salt. Gently fold into the wet mixture until just combined.
- Pour the batter into the prepared pan and bake for 50 to 60 minutes until set; check doneness with a skewer.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
