  • 1 ½ cups fresh strawberries, hulled and diced
  • 1 tablespoon granulated sugar (for macerating berries)
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • 2 tablespoons light brown sugar (optional)
  • ¼ cup unsalted butter, melted
  • ¼ cup vegetable oil
  • 2 large eggs
  • ¾ cup buttermilk
  • 1 ½ teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. In a small bowl, toss strawberries with granulated sugar and let sit for 10–15 minutes. Drain excess juice and coat with flour.
  3. In a large bowl, whisk flour, baking powder, baking soda, and salt together.
  4. In another bowl, combine sugars, melted butter, oil, eggs, buttermilk, and vanilla until smooth.
  5. Pour wet ingredients into dry ingredients and fold gently until combined. Add floured strawberries and mix carefully.
  6. Pour batter into the pan and bake for about 55–65 minutes or until a skewer comes out with moist crumbs.
  7. Cool in the pan for 15 minutes before transferring to a wire rack.
