Ingredients
- 1 ½ cups fresh strawberries, hulled and diced
- 1 tablespoon granulated sugar (for macerating berries)
- 1 ¾ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup granulated sugar
- 2 tablespoons light brown sugar (optional)
- ¼ cup unsalted butter, melted
- ¼ cup vegetable oil
- 2 large eggs
- ¾ cup buttermilk
- 1 ½ teaspoons vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
- In a small bowl, toss strawberries with granulated sugar and let sit for 10–15 minutes. Drain excess juice and coat with flour.
- In a large bowl, whisk flour, baking powder, baking soda, and salt together.
- In another bowl, combine sugars, melted butter, oil, eggs, buttermilk, and vanilla until smooth.
- Pour wet ingredients into dry ingredients and fold gently until combined. Add floured strawberries and mix carefully.
- Pour batter into the pan and bake for about 55–65 minutes or until a skewer comes out with moist crumbs.
- Cool in the pan for 15 minutes before transferring to a wire rack.
