  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g granulated sugar
  • 90 g raw sugar
  • 1 teaspoon vanilla extract
  • 85 g dark or milk chocolate chips

Instructions

  1. Preheat your oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) conventional.
  2. Melt chopped dark chocolate and butter in a heatproof bowl over simmering water; stir until smooth and mix in vanilla.
  3. In a separate bowl, whisk eggs with sugars until thick and fluffy.
  4. Sift flour, cocoa powder, baking powder, and salt into another bowl; fold in chocolate chips.
  5. Gradually add melted chocolate to the egg mixture, then gently incorporate dry ingredients until just combined.
  6. Scoop batter onto a lined baking tray, leaving space between each scoop.
  7. Bake for 12–14 minutes until set with a crackly top. Sprinkle sea salt if desired.
  8. Let cool on the tray for about 10 minutes before transferring to a cooling rack.
