- 1 lb steak bites
- 2 tbsp butter
- 3 cloves garlic, minced
- Salt
- Pepper
- Thyme
- 3-4 russet potatoes, thinly sliced
- 1½ cups shredded cheddar cheese
- ¾ cup sour cream
- 1 cup milk
- 3 tbsp butter (for casserole)
- ½ tsp garlic powder
- Chopped green onions (for garnish)
Instructions
- Preheat your oven to 375°F.
- In a buttered baking dish, layer thinly sliced russet potatoes evenly.
- In a mixing bowl, combine milk, sour cream, garlic powder, and melted butter; pour over the potatoes.
- Cover and bake for 45 minutes. Remove foil, top with cheddar cheese and optional turkey bacon, then bake uncovered for an additional 15 minutes until golden.
- Meanwhile, in a skillet over medium-high heat, melt butter and sauté minced garlic before searing the steak bites until browned on all sides; season to taste.
- Serve the loaded scalloped potatoes topped with the seared steak bites and garnish with chopped green onions.
