Ingredients
- 8 bone-in chicken thighs
- ⅓ cup extra-virgin olive oil
- ¼ cup lemon juice
- 4 garlic cloves (minced)
- 1 tablespoon dried oregano
- 2 teaspoons dried thyme
- 2 teaspoons Dijon mustard
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
Instructions
- In a small bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, Dijon mustard, salt, and black pepper to create the marinade.
- Place the chicken thighs in a large mixing bowl and pour the marinade over them. Ensure each piece is well-coated. Cover and refrigerate for 1 to 2 hours (or up to 8 hours).
- Preheat your oven to 350°F (180°C). Arrange the marinated chicken in a baking dish and pour any remaining marinade over the top.
- Bake for 40 to 45 minutes until the chicken reaches an internal temperature of 175°F (80°C). For crispy skin, broil for an additional 2 to 3 minutes at the end of cooking.
