Instructions
- Prepare the pineapple by slicing it into circles and drizzling with olive oil.
- Season chicken breasts with olive oil, salt, pepper, thyme, garlic powder, and red pepper flakes.
- Preheat the grill to medium-high heat; grill chicken for 7 minutes per side and pineapple for 3-4 minutes per side until caramelized.
- Chop vegetables (romaine, onion, cucumber, tomatoes) while grilling.
- Whisk together dressing ingredients (olive oil, lime juice, honey, garlic powder, salt, pepper).
- Slice the grilled chicken and assemble the salad by layering greens and toppings in a bowl; drizzle with dressing before serving.
