- 1 pound elbow macaroni
- 1 cup mayonnaise
- 1/4 cup sweet pickle relish
- 2 tablespoons apple cider vinegar
- 1 tablespoon yellow mustard
- 1/4 cup chopped celery
- 1/4 cup chopped onion
- Salt and black pepper to taste
Instructions
- Cook elbow macaroni in a large pot of salted boiling water according to package directions until al dente. Drain and cool.
- In a mixing bowl, whisk together mayonnaise, sweet pickle relish, apple cider vinegar, yellow mustard, salt, and black pepper until smooth.
- Combine cooled macaroni with chopped celery and onion in a large bowl. If desired, add hard-boiled eggs.
- Pour dressing over the pasta mixture and gently toss until well coated.
- Cover and refrigerate for at least one hour before serving to let flavors meld.
