  • ½ teaspoon onion powder
  • 1 small yellow onion, thinly sliced
  • 3 cups bite-size broccoli florets
  • 1 zucchini, thinly sliced
  • 1 small yellow bell pepper, cut into chunks
  • ¼ cup low sodium chicken broth (or apple juice)

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  2. Season chicken pieces with salt, pepper, and half of the spice mix. Cook until browned (6 to 8 minutes).
  3. Remove chicken from the skillet and set aside.
  4. Add remaining oil; sauté onions for about 2 minutes, then add broccoli, zucchini, and bell peppers.
  5. Stir in the rest of the seasoning mix; cook until veggies are crisp-tender (4 to 6 minutes).
  6. Pour in the chicken broth; return cooked chicken to the skillet.
  7. Stir everything together and cook for an additional minute before serving.
