- 2 cups rolled oats
- 1/2 cup almond flour
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/4 cup honey or maple syrup
- 1/4 cup almond butter
- 1/4 cup unsweetened applesauce
- 1 large egg
- 1 tsp vanilla extract
- 1/3 cup dark chocolate chips
- 1/4 cup dried fruit (optional)
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
- In a large bowl, combine the rolled oats, almond flour, baking soda, cinnamon, and salt. Stir until well mixed.
- In another bowl, whisk together the honey or maple syrup, almond butter, applesauce, egg, and vanilla extract until smooth.
- Pour the wet ingredients into the dry mixture. Stir until well combined.
- Fold in the dark chocolate chips along with any dried fruit or chopped nuts if desired.
- Transfer the batter into your prepared baking dish and spread it out evenly. Bake for 20-25 minutes or until golden brown.
- Allow the bars to cool in the baking dish for 10 minutes, then transfer to a wire rack to cool completely before slicing.
