Instructions
- In a large mixing bowl, combine oat flour, coconut flour, and protein powder until well mixed.
- Add pumpkin puree, pumpkin spice blend (or cinnamon), almond butter, and maple syrup to the dry mixture.
- Mix thoroughly using a food processor or spoon until you form a sticky dough. Adjust consistency by adding more pumpkin puree or almond butter if necessary.
- Form small balls (about one inch in diameter) using your hands or a cookie scoop.
- Place on a parchment-lined plate or tray and refrigerate for at least 30 minutes to firm up before serving.
