- 1/3 cup coconut flour
- 1/4 cup maple syrup
- 1 cup dark chocolate chips
- 1/2 tablespoon coconut oil
Instructions
- In a mixing bowl, combine peanut butter, coconut flour, and maple syrup until smooth.
- Form the mixture into egg shapes by rolling into 1-inch balls and flattening into ovals.
- Place on parchment-lined cookie sheet and freeze for about 30 minutes.
- Melt chocolate chips and coconut oil in a microwave-safe bowl in intervals, stirring until smooth.
- Coat each frozen egg in melted chocolate using forks and let excess drip off.
- Return coated eggs to parchment paper and allow to harden.
- For extra flair, drizzle additional melted chocolate on top before refrigerating.
