- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1/4 cup soy sauce (or tamari for gluten-free)
- 1/4 cup honey (or maple syrup/agave nectar)
- 3 cloves minced garlic
- 2 medium sweet potatoes
- Salt and pepper to taste
- Optional: red pepper flakes and smoked paprika
Instructions
- 1. Preheat your oven to 400°F (200°C).
- 2. Wash, peel, and cube the sweet potatoes. Toss them in olive oil, salt, and pepper on a baking sheet.
- 3. Roast sweet potatoes in the oven for 20-25 minutes until tender.
- 4. In a skillet over medium-high heat, sear chicken breasts in olive oil until golden brown (5-7 minutes each side).
- 5. Whisk together soy sauce, honey, garlic, smoked paprika, red pepper flakes, salt, and pepper; pour over chicken in the skillet.
- 6. Simmer until chicken reaches an internal temperature of 165°F (74°C).
- 7. Serve alongside roasted sweet potatoes.
