  • 6 chicken quarters
  • ½ apple
  • ¼ cup soy sauce
  • ¼ cup rice vinegar
  • 2 inches ginger
  • 4 cloves garlic
  • 2 stalks green onion
  • 2 tbsp sesame oil
  • 2 tbsp sweetener (sugar)
  • 1 tsp pepper

Instructions

  1. In a mixing bowl, combine soy sauce, rice vinegar, sesame oil, sweetener, and pepper. Grate ginger and finely chop garlic and green onion; add to the marinade along with chopped apple.
  2. Coat chicken quarters in the marinade, seal in a bag or bowl, and refrigerate for at least 15 minutes (or overnight for more flavor).
  3. Preheat air fryer to 380°F (193°C) for about 5 minutes.
  4. Place marinated chicken legs in the air fryer basket in a single layer. Cook for about 25 minutes, flipping halfway through until they reach an internal temperature of 165°F (74°C).
  5. Let rest for a few minutes before serving; optionally sprinkle with sesame seeds.
