- 1/2 cup shredded coconut, toasted
- 2 teaspoons lime zest
Instructions
- Preheat your oven to 350°F (175°C) and grease your donut pan.
- In a bowl, mix flour, baking powder, salt, sugar, and lime zest.
- In another bowl, whisk together melted coconut oil, egg, and coconut milk until smooth.
- Combine wet and dry ingredients gently until just mixed—small lumps are fine.
- Fill the donut pan three-quarters full with batter and bake for 10 minutes or until golden brown.
- Allow cooling before glazing with a mixture of confectioners' sugar, key lime juice, lime zest, and salt.
- Sprinkle with toasted shredded coconut before serving.
