- 4 boneless, skinless chicken breasts (about 6-8 oz each)

- 1 ½ cups panko breadcrumbs
- 4 slices cooked chicken breast (substituting for ham)
- 4-8 slices Swiss cheese
- ½ cup mayonnaise
- 3 tablespoons Dijon mustard
- 1 tablespoon honey
- 1 tablespoon lemon juice
Instructions
- Preheat oven to broil. Pound chicken breasts between plastic wrap until about ½ inch thick.
- Set up a breading station: one bowl with flour seasoned with salt and pepper, another with beaten eggs, and the third with panko breadcrumbs mixed with optional spices.
- Dredge each chicken breast in flour, dip into beaten eggs, then coat thoroughly in panko breadcrumbs.
- Heat olive oil in a skillet over medium heat and cook the chicken for about 5-7 minutes per side until golden brown.
- Place cooked chicken on a baking sheet, top each with a slice of cooked chicken breast and Swiss cheese, then broil until the cheese melts.
- For the sauce, mix mayonnaise, Dijon mustard, honey, lemon juice, salt, and pepper until smooth.
