Ingredients
- 1 (19 oz) bag frozen cheese tortellini
- 2 tablespoons olive oil
- 1½ pounds boneless, skinless chicken breasts
- ½ cup sun-dried tomatoes in oil
- 3 teaspoons minced garlic
- 1 cup low-sodium chicken broth
- 2 cups heavy cream
- 1 cup finely shredded parmesan cheese
- 2 cups chopped baby spinach
Instructions
- Season chicken pieces with black pepper, Italian seasoning, and paprika.
- Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook until golden brown (6-8 minutes). Remove from skillet.
- Reduce heat to medium-low; melt butter in the same skillet. Sauté garlic and sun-dried tomatoes for about 30 seconds.
- Add chicken broth, heavy cream, Italian seasoning, black pepper, and paprika; whisk until bubbling. Stir in parmesan cheese until melted.
- Return chicken to the skillet along with chopped spinach and frozen tortellini; simmer for about 5 minutes until spinach wilts.
