- 40 ounces pineapple chunks (drained)

- 10 ounces mini vegan marshmallows
- 3 cups sweetened flaked coconut
- 12 ounces chopped pecans
- 8 ounces cream cheese (softened)
- 3.4 ounce package instant cheesecake flavored pudding (unprepared)
- 1 cup French vanilla creamer (liquid)
Instructions
- In a medium tall bowl, whip softened cream cheese using an electric mixer until smooth. Gradually add the dry pudding mix and blend well.
- Slowly incorporate the French vanilla creamer into the cream cheese mixture until smooth and fully combined.
- In a large mixing bowl, combine drained pineapple chunks, halved maraschino cherries, vegan marshmallows, coconut flakes, and chopped pecans.
- Gently fold the cheesecake mixture into the fruit mixture until evenly combined.
- Chill the salad in the refrigerator until ready to serve or enjoy immediately.
