- 2 cups graham cracker crumbs
- ½ cup unsalted butter
- 16 ounces full-fat cream cheese
- ¼ cup granulated sugar
- 1 tablespoon fresh lemon juice
- 1 teaspoon pure vanilla extract
- 2 cups heavy whipping cream
- 1 cup fresh strawberries
Instructions
- Prepare the crust by mixing graham cracker crumbs and melted butter; press firmly into a 9×13 inch baking dish.
- Beat cream cheese and sugar until smooth. Add lemon juice and vanilla, mixing until combined.
- Whip heavy cream with powdered sugar until stiff peaks form; fold half into the cheesecake mixture.
- Spread half of the cheesecake filling over the crust, layer sliced strawberries on top, then repeat with remaining filling. Top with additional whipped cream.
- Chill in the refrigerator for at least 4 hours before serving.
