- 2 medium Zucchini, chopped
- 2 medium Bell Peppers, chopped (mix of colors)
- 1 large Red Onion, chopped
- 1 cup Cherry Tomatoes
- 3 tablespoons Olive Oil
- 3 cloves Garlic, minced
- 1 teaspoon Dried Oregano
- Salt and Pepper to taste
- Optional: 1 tablespoon Lemon Juice for serving
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine zucchini, bell peppers, red onion, and cherry tomatoes. Add olive oil, garlic, oregano, salt, and pepper; toss to coat evenly.
- Spread the vegetable mixture on a baking sheet in an even layer.
- Roast in the oven for about 30 minutes until tender and slightly caramelized, stirring halfway through.
- Drizzle with lemon juice before serving.
