Ingredients
- 2 large peaches (about 300g peeled and chopped)
- 1/2 tablespoon lemon juice
- 3/4 teaspoon pure almond extract
- 210g all-purpose flour (1 and 1/2 cups)
- 2 and 1/2 teaspoons baking powder
- 1 to 1 and 1/2 teaspoons cinnamon
- 2 large eggs (room temperature)
- 105g granulated sugar (½ cup)
- 115g melted butter (½ cup)
- 120g milk (room temperature)
Instructions
- Preheat your oven to 350°F (177°C). Grease an 8½ x 4½ inch loaf pan and line it with parchment paper.
- Peel and cube the peaches, then mix them in a bowl with lemon juice and almond extract.
- In a large bowl, whisk together flour, baking powder, cinnamon, and salt.
- In another bowl, combine eggs and sugar; whisk until mixed. Add milk and melted butter; stir well.
- Combine wet and dry mixtures gently; do not overmix. Fold in the peach mixture.
- Pour the batter into the prepared pan and bake for about 44–48 minutes or until a toothpick comes out clean.
- Let it cool in the pan for half an hour before transferring to a wire rack.
