Instructions
- Preheat oven to 375°F (190°C) and prepare muffin tin with liners.
- In one bowl, whisk flour, sugar, baking powder, salt, and cinnamon together.
- In another bowl, mix melted butter, milk, vanilla extract, and diced peaches.
- Combine wet and dry ingredients gently until just mixed.
- In a separate bowl, mix brown sugar, oats, and cinnamon for the topping.
- Fill muffin liners two-thirds full with batter and sprinkle with streusel.
- Bake for about 25 minutes until golden brown; check doneness with a toothpick.
- Cool for 5 minutes before transferring to a wire rack.
